Curry Skillet Meal Seasoning
In a bowl, toss chicken with Curry Skillet Meal Seasoning.
Heat Natural Grapeseed Oil in a 12-inch nonstick skillet over medium heat. Add chicken, red onion, and cauliflower. Saute for 7-10 minutes or until onions are translucent and chicken is starting to brown.
Stir in diced tomatoes and coconut milk. Bring to a boil.
Stir in rice; cover and simmer for 12-15 minutes or until rice is tender and chicken is cooked through: 165F.
