1 (15.5 ounce) can kidney beans, drained and rinsed
1/2 head cauliflower, chopped
2 tablespoons lime juice, divided
2 tablespoons cilantro, chopped
1/2 yellow onion, chopped
1 romaine heart, thinly sliced
Preheat oven to 375°F. In a food processor, pulse beans, cauliflower, and 2 tablespoons Taco Seasoning until cauliflower is chopped and ingredients are incorporated.
Transfer to a sheet pan. Bake for 25 minutes, stirring halfway through.
Meanwhile, make guacamole by mashing avocados with 1 tablespoon lime juice, salt, and 2 tablespoons cilantro.
Make salsa by pulsing diced tomatoes, onion, remaining 1 tablespoon lime juice, remaining 1/4 cup cilantro, and remaining 1 teaspoon Taco Seasoning.
Build burritos with guacamole, cauliflower mixture, and lettuce.
