Thai Chicken Lettuce Cups

1/2 red bell pepper, diced
1 mango, diced
1 scallion, sliced
1/2 lime, juiced
1 tablespoon sesame oil
1 pound ground chicken
1/2 cup Thai Sesame Sauce
2 tablespoons mint, chopped
1 head Bibb lettuce, leaves separated
1 tablespoon sesame seeds
Combine red bell pepper, mango, scallions, and lime juice. Season with salt and pepper if desired. Set aside.
Heat sesame oil in a12-inch nonstick skillet over medium heat. Add ground chicken and sauté until completely browned.
Stir in Thai Sesame Sauce and mint and continue cooking until sauce has thickened.
Serve ground chicken in lettuce cups. Top with salsa from step 1.
Garnish with sesame seeds. Serve with additional Thai Sesame Sauce if desired.
