Heat 1 teaspoon Roasted Garlic Grapeseed Oil in a nonstick skillet over medium heat. Add the carrots and scallion; saute until tender.
Add the ginger and Garlic Galore Seasoning. Cook for 1 minute more. Transfer to a bowl.
In the same skillet heat the remaining 3 teaspoons Roasted Garlic Grapeseed Oil over medium heat. Add the rice and pineapple. Cook until rice is lightly browned, 6-8 minutes.
