1 cucumber, halved lengthwise and thinly sliced
1 cup shredded carrot
3 radishes, cut into matchsticks
2 scallions, thinly sliced
Whisk together 2 tablespoons Sweet Thai Chili Sauce and lime juice.
Prepare slaw by combining cucumber, carrot, radishes, scallions, and cashews with dressing from step 1. Refrigerate until serving.
Prepare rice according to package directions.
Preheat broiler. Place salmon in a baking dish. Brush with remaining 1/4 cup Sweet Thai Chili Sauce. Broil for 7-10 minutes or until cooked through: 145°F.
