1/2 red bell pepper, diced
1 carrot, peeled and diced
Preheat oven to 450°F. Heat Natural Grapeseed Oil in a 10-inch oven-safe skillet over medium-high heat. Add the chicken thighs and cook until browned on both sides.
Add remaining ingredients to the skillet and toss to combine.
Bake for about 20 minutes or until chicken is cooked through: 165F.
