1/2 cup green bell pepper, diced
1/2 cup yellow onion, diced
1 1/2 cups brown rice, cooked according to package directions
Preheat oven to 375°F. Grease a sheet pan.
Combine ground chicken, egg, panko bread crumbs, ginger, green pepper, yellow onion, and Sweet & Sour Sauce in a bowl. Roll into 1-inch balls and place on the prepared sheet pan.
Bake meatballs for 15-20 minutes or until cooked through to 165°F.
While meatballs are baking, cook brown rice according to package directions. Add frozen peas and carrots and cover until heated through.
