Preheat oven to 425°F. Heat Natural Grapeseed Oil in a nonstick skillet over medium heat. Add the sweet potato, onion, and Chipotle Lime Rub. Sauté until sweet potato is tender, about 10 minutes. Remove pan from heat.
Stir in black beans, cilantro, and cheese.
Lay the tortillas out on a flat surface. Divide sweet potato and cheese mixture evenly among the tortillas. Roll up tightly and place seam side down on a lightly greased sheet pan.
