1 tablespoon Coconut Oil
1 yellow onion, diced
1 yellow bell pepper, diced
3 cloves garlic, minced
2 chipotle peppers in adobo sauce, diced
2 sweet potatoes, peeled and diced
Heat Coconut Oil in a large saucepan over medium heat. Add onion and bell pepper and sauté for 5 minutes. Add garlic, chipotle peppers in adobo sauce, and Chipotle Lime Rub; cook for one more minute.
Add lentils, diced tomatoes with green chilies, vegetable broth, and sweet potatoes. Bring to a boil.
