1 yellow onion, diced
1 tablespoon Guacamole Seasoning
1 tablespoon Chipotle Lime Rub
2 tablespoons Garlic Galore Seasoning
1 1/2 pounds baby red potatoes, halved
Add chicken, onion, fire roasted diced tomatoes, corn, diced green chilies, Guacamole Seasoning, Chipotle Lime Rub, Garlic Galore Seasoning Blend, chicken broth, and potatoes to a slow cooker. Cook on low for 6 hours, or high for 4 hours.
Shred chicken with forks or tongs.
Stir in heavy cream.
Serve with optional toppings such as avocado, lime wedges, and cilantro.
