Sloppy Joe Stuffed Peppers

5 bell peppers
2 tablespoons Roasted Garlic Grapeseed Oil
8 ounces mushrooms, diced
1/2 yellow onion, diced
1 pound lean ground beef
3 tablespoons Sloppy Joe Blend
1 (6 ounce) can tomato paste
1 1/2 cups water, divided
1 cup shredded cheese
Preheat oven to 400°F. Slice tops from peppers, remove seeds, and place snugly in a baking dish.
Heat Roasted Garlic Grapeseed Oil in a 12-inchnonstick skillet over medium-high heat. Add onions and mushrooms. Cook for 5 minutes.
Add ground beef and cook until meat is completely browned.
Stir in Sloppy Joe Blend ,tomato paste, and 1 cup water. Simmer for 5 minutes.
Fill peppers with mixture. Top each with cheese. Add remaining ½ cup water to the baking dish. Cover with foil. Bake for 40 minutes or until peppers are tender. Garnish with scallions.
*Optional: broil to brown cheese.
