5 (4 ounce) boneless skinless chicken breast
3 tablespoons Roasted Garlic Grapeseed Oil, divided
1 1/2 tablespoons Scampi Blend
1 pound sweet potatoes, cut into wedges
12 ounces Brussels sprouts, quartered
1 red onion, cut into wedges
1 apple, sliced
2 teaspoons Scampi Blend
Preheat oven to 400°F.
Grease a sheet pan. Toss
chicken with 1 tablespoon Roasted Garlic Grapeseed Oil, balsamic vinegar, and 1 ½
tablespoons Scampi Blend.
Transfer sweet potato,
Brussels sprouts, and red
onion to the prepared
sheet pan. Toss with remaining 2
tablespoons Roasted Garlic Grapeseed Oil and 2 teaspoons
Scampi Blend. Nestle chicken
in the vegetables. Bake for 15
Remove sheet pan from
oven. Add apple slices.
Return to oven and bake
for 10 minutes more or
until vegetables are tender
and chicken is cooked through:
