1 1/2 pound boneless skinless chicken breast
1 (20 ounce) can diced tomatoes with green chilies
1 (15.5 ounce) can black beans, drained and rinsed
4 tablespoons Guacamole Seasoning
2 cups dry rice, prepared according to package directions
1 cup shredded cheddar cheese
2 scallions, sliced
1/4 cup chopped cilantro
Add the chicken, diced tomatoes, black beans, and Guacamole Seasoning to a slow cooker and cook on high for 4-5 hours or until chicken is very tender
Remove chicken and shred. Return to slow cooker and toss.
Serve over rice with cheddar, scallions, and cilantro.
