Preheat oven to 425°F. Slice potato into 1/2-inch thick wedges. Toss with Roasted Garlic Grapeseed Oil. Spread on a sheet pan and bake for 20-25 minutes.
Remove from oven and toss with 4 teaspoons Seafood Seasoning.
Meanwhile whisk together mayonnaise, lemon juice, and remaining 1/2 teaspoon Seafood Seasoning. Serve with potatoes for dipping.
