3 cups lettuce, shredded
1/2 red bell pepper, thinly sliced
Prepare rice noodles according to package directions. Cut into 2-inch sections; set aside.
Fill a large bowl with hot water. Working with one wrapper at a time, submerge wrapper in water to soften (10-30 seconds), then transfer to a clean working surface.
Top with lettuce, cooked rice noodles, bean sprouts, red bell pepper, carrot, and 3 basil leaves.
Fold in the ends, then roll to form a sealed cylinder.
Cut nime chow in half to serve.
