16 lasagna noodles, prepared according to package directions
5 ounces frozen spinach, thawed and excess liquid squeezed out
1/2 cup shredded parmesan cheese
1 teaspoon Garlic Galore Seasoning
2 teaspoons Italian Seasoning, divided
Preheat oven to 350°F. Prepare lasagna noodles according to package directions. Drain and lay flat on a working surface or sheet pan. Pat dry with paper towels.
Mix together the ricotta, spinach, parmesan, Garlic Galore Seasoning, 1 teaspoon Italian Seasoning, and egg white.
Place 1 lasagna noodle on your working station. Cut the noodle in half lengthwise. Spread about 2 tablespoons of the filling on a noodle half. Roll up the noodle and place in a baking dish seam side down.
Repeat with remaining noodles and filling. (Makes 32 mini roll-ups).
Stir together tomato sauce and remaining 1 teaspoon Italian Seasoning. Top lasagna roll-ups with tomato sauce and mozzarella cheese.
