1 yellow onion, diced
2 carrots, diced
2 celery stalks, diced
1/2 cup red wine, optional
1 (15 ounce) can hominy, drained and rinsed (or corn)
Heat a large pot over medium heat. Add the ground pork, onion, carrots, tomato paste, and Cajun Seasoning. Cook, stirring, until pork is cooked through. (Drain grease from pot if needed).
Add chicken broth, wine, and hominy; stir and cook over medium heat for 20 minutes
