2 tablespoons Smoky Bacon Grapeseed Oil
1 red onion, diced
1 bell pepper, diced
1 1/2 cups dried brown lentils
4 tablespoons Chili Blend
1 (28 ounce) can diced tomatoes
7 cups vegetable stock
2 sweet potatoes, peeled and diced
1 (15.5 ounce) can black beans, drained and rinsed
Heat Smoky Bacon Grapeseed Oil in a large stock pot over medium heat. Add red onion and bell pepper. Sauté for 5 minutes.
Add lentils and Chili Blend and stir to coat everything in seasoning.
Add diced tomatoes and vegetable broth. Bring to a simmer and cook for 15 minutes. Stir occasionally.
Add sweet potatoes and cook for about 15-20 minutes or until potatoes and lentils are tender. Stir occasionally.
Stir in beans and cook until heated through. Season with salt to taste.
Serve with your favorite toppings.
