1 pound ground beef
1 yellow onion, diced
1 red bell pepper, diced
1 (28 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes
1 bag Lasagna Skillet Meal Seasoning
3 cups chicken broth
1 cup ricotta cheese
1/2 cup grated parmesan cheese
1/4 cup parsley
2 cups small pasta shape (penne, elbows, shells etc.)
1/2 cup shredded mozzarella cheese
Heat a large saucepan over medium-high heat. Add beef, onion, and red bell pepper; cook until beef is browned.
Stir in tomato sauce, diced tomatoes, chicken broth, and Lasagna Skillet Meal Seasoning; bring to a boil.
Add pasta, reduce heat, and simmer for about 10- 15 minutes or until pasta is tender.
Meanwhile, mix together ricotta, parmesan, and parsley.
Divide soup among bowls. Top with shredded mozzarella and ricotta mixture.
