1/2 lime, juiced
13 ounces radishes, halved
1 pound red potatoes, cut into 1-inch pieces
2 tablespoons Parmesan cheese, shredded
Combine Chipotle Lime Rub, 1/4 cup Natural Grapeseed Oil, and lime juice. Pour over pork chops and marinate in the refrigerator for 2 hours.
Preheat oven to 400°F.
In a small bowl, combine radishes, red potatoes, Rodeo Rub, dark brown sugar, and 1 tablespoon Natural Grapeseed Oil.
Roast vegetables on a foil lined sheet pan for 20-25 minutes, or until browned and crisp. Finish with Parmesan cheese and fresh herbs if desired.
Meanwhile, preheat grill or grill pan over medium high heat. Grill marinated pork chops for 5-6 minutes on each side, or until pork chops are cooked through: 145°F.
