Cut the chicken into bite-sized pieces. Mix with Natural Grapeseed Oil, lime zest, lime juice, and 1 1/2 tablespoons Fajita Seasoning. Marinate for 30 minutes.
Cut bell peppers and onion into bite-sized pieces. Thread chicken and vegetables onto skewers.
Preheat grill to medium- high heat. Clean and grease the grates. Grill skewers for about 10 minutes, flipping once or twice, until vegetables are tender and chicken is cooked: 165°F.
While skewers are cooking, prepare rice. Add rice, tomato sauce, water, and remaining 1 tablespoon Fajita Seasoning. Bring to a boil. Reduce heat to medium-low, cover, and simmer for about 10 minutes or until rice is tender and liquid is absorbed.
