1 head cauliflower, cut into florets
1 red bell pepper, diced
1/2 red onion, diced
2 tablespoons Coconut Oil, melted
1 1/2 tablespoons Taco Seasoning
1 (15.5 ounce) can black beans, drained and rinsed
1 tablespoon Taco Seasoning
Preheat oven to 400°F. Line a sheet pan with foil and grease.
Toss together cauliflower, red bell pepper, red onion, Coconut Oil, and 1 1/2 tablespoons Taco Seasoning. Spread in a single layer on the sheet pan. Bake for 30 minutes, stirring halfway through cooking.
Prepare rice according to package directions. Stir in black beans, diced green chilies, salsa, and remaining 1 tablespoon Taco Seasoning. Cook until heated through.
Divide lettuce among plates. Top with rice mixture and cauliflower mixture.
