6 (4 ounce) boneless skinless chicken breasts
2 tablespoons Carne Asada Seasoning
1/2 red onion, diced
1 red bell pepper, diced
3 plum tomatoes, diced
2 cups instant brown rice, prepared according to package directions
Heat a grill to medium-high heat. Clean and grease the grill grates. Place the corn on the grill and cook, flipping occasionally for 5-10 minutes or until lightly charred.
Season chicken with Carne Asada Seasoning and place on the grill. Cook for about 5 minutes on each side or until cooked through: 165°F.
Transfer chicken to a cutting board, and rest for 5 minutes before slicing. Cut corn off the cob.
In a large bowl, combine corn kernels, red onion, red bell pepper, tomatoes, rice, Cilantro Lime Seasoning, and Natural Grapeseed Oil. Season with salt and pepper if desired.
