Broiled Salmon with Greek Orzo Salad

1/2 cup plain Greek yogurt
1/4 cucumber, grated
8 ounce dry orzo, prepared according to package directions
1/4 cup feta cheese
1/3 cup golden raisins
1 tablespoon chopped mint
1/4 cup pine nuts, toasted
1/2 cup roasted red peppers, chopped
2 tablespoons Tzatziki Seasoning
4 (5 ounce) salmon fillets
In a large mixing bowl combine the yogurt, cucumber, cooked orzo, feta, golden raisins, mint, pine nuts, roasted red peppers, and 1 tablespoon Tzatziki Seasoning. Refrigerate until ready to serve.
Place salmon on a foil lined sheet pan and seasoning with remaining 1 tablespoon Tzatziki Seasoning. Broiler for about 15 minutes or until salmon is cooked through; 145;F. Serve broiled salmon with orzo salad.
