1 yellow onion, diced
1 cup corn
1 (15.5 ounce) can kidney beans, drained and rinsed
1/2 cup Red Enchilada Sauce
1 tablespoon Carne Asada Seasoning
1 zucchini, chopped
Add all ingredients to a slow cooker. Cook on low for 6 hours or high for 4 hours or until beef is very tender.
