1 head cauliflower, cut into florets
3/4 cup Orange Sauce
2 scallions, sliced
Preheat oven to 400°F and place a wire cooling rack on a sheet pan. Place panko in a mixing bowl. Whisk eggs in a separate bowl. Dip cauliflower pieces in egg and then coat in panko.
Place breaded cauliflower on prepared sheet pan. Bake for 25-30 minutes or until panko is crisp and cauliflower is tender.
Meanwhile, prepare rice according to package directions.
Heat Orange Sauce in a 12-inch nonstick skillet over medium heat. Add the baked cauliflower and toss in the sauce.
